The Kursaal Congress Centre in the city of San Sebastian is once again hosting this gastronomic event, which has established itself as a world leader in haute cuisine and in the discovery of surprising culinary trends. This was the first international gastronomy conference in the world, and the 2023 edition celebrates its 25th anniversary by inviting great national and international chefs who have made a mark on the history of contemporary gastronomy.

In this edition, cuisine from Japan and the United States will play a special role, with presentations by some of their chefs and food critics. Under the title “The Future of History”, different awards will be granted. The event will explore not only the new trends emerging in cuisine, but also the milestones that have marked recent culinary history: from molecular to New Nordic Cuisine, gastronomic hits from around the world, sustainability projects and more.

Great names in gastronomy

The list of speakers in 2023 is a real treat. International chefs at conference will include Rasmus Munk (creator of “holistic cuisine” in Denmark), René Redzepi (the father of New Nordic Cuisine), José Andrés (the ambassador of Spanish cuisine in the United States), Leonor Espinosa (who showcases the culinary traditions of Colombia), Yoshihiro Narisawa (pioneer of sustainable cuisine and whose restaurant is considered the best in Japan), Matthew Lightner (who revolutionised Oregon cuisine with avant-garde techniques) or Alex Atala (one of the most important chefs in Latin America).Confirmed attendees hailing from Spain include prestigious chefs such as Ángel León, Joan Roca, Eneko Atxa, Elena Arzak, Pedro Subijana, Mateu Casañas, Oriol Castro, Eduard Xatruch, Javier Olleros, Albert Adrià, Begoña Rodrigo, Josean Alija, Ricard Camarena, Quique Dacosta, Diego Guerrero, Nacho Manzano, Hideki Matsuhisa and Artur Martínez.

Tribute to unique careers

This special edition also takes the opportunity to recognise the professional careers of three important individuals. The Homage Award will go to Ferran Adrià, the Spanish chef whose creations led the last great world revolution in gastronomy and who was the chef of the famous restaurant “El Bulli”.The 25th anniversary “Gueridón de Oro” award will go to Jancis Robinson, the most influential woman in the wine industry for 40 years. In addition, the Pau Albornà i Torras Journalism Award will go to a great authority on gastronomic criticism: Raphael Garcia Santos.Altogether, San Sebastian Gastronomika is a unique opportunity to discover first-hand how culinary milestones have been achieved over the years and how there are plans to keep shining the spotlight on fascinating future projects. An ode to gastronomy from the hand of its greatest experts.
